It's relatively simple to
infuse any flavor into olive oil, but it does require some patience. Simmering
garlic cloves in olive oil is the quickest technique to infuse garlic into the
oil.

To liberate the flavor of fresh
garlic cloves, peel them and crush them with the back of a thick knife. In a
pan, place the cloves.
Pour just enough olive oil into the pan to
coat them thinly, then cook them for 3–5 minutes over medium heat. If the
garlic begins to brown around the edges, reduce the heat immediately, as they
do not want the garlic to cook through.
Reduce the heat to a low level and add the
remaining olive oil that the user wants to infuse into the pan. Allow the oil
to boil at this level for about 20 minutes, or until it begins to slightly
